Mango Froyo

The day temperature is starting to soar. Soon it will be mango season. As it starts to hot up the mind naturally turn to thoughts of mango. All winter the containers of mango pulp from homegrown Amrapali mangoes just sit forgotten in the freezer.

I was on quite a roll last year. I’d made two kinds of ice creams with the bought cream but still had half the whole milk. which I turned into creamy yogurt. Don’t you love the malai on top of whole milk dahi? The following day as I reached for dahi to make the morning mango-smoothie/lassi, I thought the creamy dahi would be even better in frozen yogurt. The dahi had been cut and about a fourth of it already eaten. I tilted the dahi pot to drain as much whey as I could. As I set about grabbing the blender and other things, I took more dahi (made with regular 3% fat toned milk, the one that does not come in plastic bags!) in my big metal strainer lined with muslin. This dripped for not more than 15-20 minutes. You can skip this step if you are pressed for time; I don’t always do it.

I blended everything with a stick blender and chilled the mix in the fridge as the container of the ice cream maker chilled overnight in the freezer. Next morning I churned it for a mere 15 minutes and transferred it to the freezer to chill for a few hours. Remember to remove the frozen yogurt an hour or more before it’s time to serve. That brings it to just the right temperature and level of thaw to taste the flavours better and also makes it easy to scoop. Continue reading “Mango Froyo”

The Fruits of Summer

Hell couldn’t be hotter than Delhi in June.  This summer seems to be particularly hot.  Many of my less heat-hardy plants have just dessicated.  Even the Temple Tree is showing signs of heat stress!  I can only pray the monsoon will keep its date with Delhi; if all stays well with the wind systems, it should hit Delhi on June 29.

The week has started off well with a sharp shower on Monday morning that brought a seven degree drop in the day temperature, from a scorching 44 degrees Celsius the previous day to a ‘balmy’ 37.  We take our silver linings as they come.  Monday was also my birthday and I was supposed to hit the streets, albeit those of the air-conditioned neighbourhood mall, with my sister, mom, and niecelet, who herself turned all of six years last week.  No, I wasn’t planning to shop till I dropped; it was Mom who needed company to shop.  We spent a pleasant couple of hours telling her what to splurge on.  Nothing beats shopping therapy when it is not even your own money.

The Mangoes are Sour

A big chunk of my readers live outside India. And all of them will appreciate how I have tried not to rub salt on their mangoes wounds this year. There has been no talk of mangoes, whatsoever, on this blog so far this year; no debate on which mango is the King, or that mango is King.

But ’tis the season and you all have access to reasonably good unripe sour mangoes. Sour mangoes are loved all over Asia, cooked with dal, with vegetables (it is the perfect foil for bittergourd), or enjoyed as a relish such as Pel’s nam prik wan kap mamuang khiew. And when you don’t want to fuss, just slice them up, dip in salt, and taste nirvana. Not as much fun today when my teeth sour much too quick, but a favourite summer activity when we were kids.
